Coconut Berry Pops

The 4th of July just got a whole lot sweeter with these pops inspired by fun 4th of July.  These pops are perfect for celebrating with your friends and family, not only because they’re creamy and refreshing, but they’re ridiculously easy to make.

Serves: 12 popsicles

Ingredients

1 can light coconut milk
1 Tbsp. raw honey
1 tsp. vanilla
2 cups fresh mixed berries (we used blueberries and tayberries)
Directions

Blend the coconut milk, honey, and vanilla together.
Fill 12 popsicle molds most of the way up with berries.
Pour the coconut milk mixture into the molds, until each mold is full. Place popsicle sticks into each mold.
Place in your freezer overnight before removing from the molds and storing in your freezer.
Enjoy the party!

We started Nibs & Greens with the hope of sharing our passion for healthy, fun food with people who are mindful about what they put in their bodies. Why Nibs and Greens? Because they’re two of our favorite ingredients! Also, they’re both extremely good for you, nutrient dense, and we often pair them together – lots of green smoothies! We created Nibs and Greens raw treats and cheesecakes as a way to directly connect with you and bring you our food creations. All of our recipes are plant-based, vegan, gluten-free, and many are raw. We take a lot of pride in what we eat and make sure to use organic and, if possible, local ingredients.

XO,
